What is the difference between "Grass Finished" and "Grain Finished"?

 

 

A "Grass Finished" animal is not fed grain or placed on feed. The meat is normally a "leaner" meat.

 

In a "Grain Finished" calf, the calf is fed grain and hay for the last 90 to 120 days before processing. The meat is more marbled and can be more tender.

 

However, both are cared for the exact same during their life before "finishing."

 

What is "Hang Weight"?

 

"Hang Weight" or "Rail Weight" is the weight of the animal when it is ready to go into the cooler for aging.

 

It is what you would normally see hanging on a hook inside the cooler.

 

 

 

Is the beef I'm getting "Aged"?

 

 

Yes! Your beef will hang in the cooler for 10-14 days depending on the moisture and fat content. During this time the flavor intensifies before packaging.

 

Can I "Choose" how many steaks and what kind?

 

It is our desire to provide you with the cuts of beef your family enjoys.

 

When choosing a "Whole" or "Half" beef you will be given a cut sheet. This will allow you to choose what type of cuts will be packaged for you.

 

A quarter or eighth beef will be standard cuts of steak, roasts, and ground beef.

How and where are the calves raised in your operation?

 

We're glad you asked! Our cattle are raised and grown in central Oklahoma. We wean our calves between 6 and 7 months of age. They are stage weaned to reduce stress in the calf and mama cow.

They are always on natural grass (or hay in the winter). They are never on growth hormones or fed antibiotics or steroids. They are raised and cared for in the most natural and stress free atmosphere we can provide.

 

It may sound strange to some but we care for our cattle and strive to put their need even before our own.
